I wanted to bake something for Michelle’s birthday, so over the weekend I baked these Regency Queen Cakes. I found the recipe by googling “regency dessert recipe” and clicking one of the first results that came up. 😂
I largely followed the recipe aside from a few small changes:
- I halved the recipe, then added 1 tbsp of rosewater and 1 tbsp of brandy. I couldn’t really taste either in the finished cake! Which was slightly disappointing, because I was excited to finally use the rosewater that I think I bought pre-pandemic..
- I made self raising flour by using the recipe by King Arthur because I didn’t have any on hand
- I didn’t have currants, so I used chopped up dried apricots instead
The cakes tasted fine, but mostly just sweet. I’m not planning on making them again to be honest, but it was fun to try something that might (? I did not actually verify this) be a bit more historical haha. ♡
