My first experiment in the world of jelly! I don’t know if I got over-ambitious with the whipping, but it’s possible I mixed this until it was more than the recommended double-volume.. I say that because this ended up *almost* as light as the bubbles you get from pouring soda too quickly haha (video demonstrating this below). It was so light it wasn’t really a satisfying treat..
I also followed my Asian instincts and cut the amount of sugar used (and used honey instead of granulated sugar), so it ended up slightly more sour than was satisfying too hahah, whoops. It was still really interesting trying this out, and using gelatin when it’s chilled to “egg white consistency.”
