I was pretty set on meal prepping something with caprese salad ingredients along with asparagus, and I found this recipe from a quick google search.
I was pretty loose on ingredient amounts aside from the dressing. It’s worth noting that the dressing recipe yields the 6 servings the recipe says it does (or more, since I feel like 1/6 was a little much for one lunch.
Some changes I made:
- Instead of cooking the asparagus on the stove, I baked it with some balsamic vinegar, lemon juice, olive oil, salt and pepper
- I used both thai and genovese basil because that’s what we had in the aerogarden
- In the future I would nix the avocado in favor of more mozzarella – the creaminess feels a but out of place for me personally. Maybe something with a crunch like cucumber would be good..
I’m surprised the photo turned out as nicely as it did! My current desk is in a poorly lit corner of the office, but I guess a cool white led lamp can do wonders.
Overall it was a nice meal prep recipe because it only required cooking for the asparagus. I was able to make my 3 lunches for the week on Monday evening after work~
